Calves Head,  Stew Cucumbers, Veal Kidney Toast

To Dress a Calves Head, Turtle Fashion. The best way {perhaps this replaced the earlier crossed through recipe}

Take a Calves Head with the Skin on, scald & clean it well then take out all the Bones; put it in clean Water to soak all night; then half boyl it & cut in peices as you fancey. Have ready some very strong Veal Broth; put a peice of Butter into a Stew pan with a Handfull of Flower, keep it stirring till dissolv'd, then put in some Veal Broth keep stirring till it boyls to a proper thickness; then put in some chop't Shallots, Parsley, Thyme, Bazill, Winter Savoury, a little of each. Have ready made some Forc'd Meat Balls of Veal, and boyl 'em enough in some Broth. Boyl 8 Eggs hard, take out the Yolks. Then put in Your Calves Head that is cut & boyl till tender in the Sauce you have prepar'd with a Glass of Madiera. some Chian Pepper & Salt to you taste. Just before you serve it, throw in your Fore't Meat Balls & Eggs. Serve it in a Turtle Shell, or Soup Dish.

To stew Cucumbers: the best manner

Cut your Cucumbers length ways, middling thick; take out all the Seeds; then lay them to steep in Salt and Water, and a little Vinegar, (with some slicet Onion,) for abt; an hour; then fry them lightly in Butter, & then stew them in Veal Gravey till they are enough. Be carefull to skim off all the Fat. Add a little whole Pepper when you stew them wth. some Salt, & a blade of Mace.

Veal Kidney Toasts; excellent good

When the Loin of Veal is roast, take out the Kidney, with a little of the Fat, cut it small, mince some Parsley, & Pepper & Salt, a little Flour & Butter, with some good Veal Gravey; mix these up thick to lay upon toasted Bread; then strew some Crumbs of Bread on them, and brown them with a Salamander

Orange Cream

Take the Yolks of 10 or 12 Eggs, beat them well; the juice of 2 Seville Oranges, a small lump of Butter, & Sugar to your Taste, stir it over a gentle Fire till 'tis thick, you may put it into French Roles, or Preserv'd Oranges; or China Dish, or Glass Bason, with Candy'd Orange or Citron slicet, on the top
